Seasoning your blanching water with salt allows you to add flavor from the inside, starting with the pasta. Not only does it heighten the overall balance of flavor in your dish, but it minimizes the overall amount of salt you need to add. Learn to use it well, and your food will always taste great.

PREP ONE PAN SPAGHETTI

In a kettle, bring 4 cups of water to a boil.

Finely chop the onions and garlic.

Heat a large pan over medium low heat. Add olive oil, then finely chopped onions. Stir to cook until the onions are translucent and soft. Add minced garlic and cook until aromatic, about 3-5 minutes. Add the tomato sauce, dry pasta, boiling water and salt in that order. Stir to combine, ensuring there is no sauce stuck to the bottom of the pan.

Bring the ingredients up to a boil, then turn down the heat and simmer for about 10-12 minutes. Use tongs to occasionally stir the pasta around so it doesn’t stick to itself.

Continue cooking until the remaining liquid has reduced into a thick sauce that coats the pasta and pasta is cooked through. Remove pasta from heat, and fold in Parmesan cheese.

Optional Addition

For added protein, add 8 oz of any ground meat with the finely chopped onions, and cook completely before adding remaining ingredients.
